Biography

Prof. Oluwatosin Benedict Adu is a Professor of Nutritional Biochemistry with over 20 years as a Researcher, Academic and Social change agent. He has BSc and MSc (Biochemistry) from Lagos State University, and a PhD (Biochemistry) from the College of Medicine, University of Lagos. He also has a PGD in Theology from the RCCG, Bible College. He started his career as a Laboratory Demonstrator in 1996 in the Department of Biochemistry, Lagos State University, and over the years has taught and supervised several undergraduate, MSc, and PhD students.
He has done several researches on:
• Isolation, functional properties and utilization potential of thaumatin a natural non-nutritive sweetener
• Role of zinc in the treatment of onchocerciasis infected mice
• Nutritional status of undergraduates in Nigerian Universities
• Glycaemic indices of selected Nigerian foods
• Nutritional evaluation and industrial utilization potential of some underutilized food crops in Nigeria
• Antioxidant, anti-diabetic and anticancer properties of local plant extracts
